Mixed Berries Muffins


I baked these muffins last Monday since my hubby had his first home-office day.

Have I mentioned how much we both LOVED spending the day together? It was awesome! He worked on his computer while I prepared brunch with scrambled eggs, muffins, German sausages and orange juice.

I´m not a morning person so we usually have breakfast separately on weekdays and even on weekends, we hardly do breakfast as I wake up in time for brunch.

Hence, it was a real treat for the hubby and he was so excited about it that he "boasted" about it to friends even before Monday! **Poor breakfast-deprived hubby"

Recipe for Mixed Berries Muffins
375grams flour
1 tbsp baking powder
½ tsp baking soda
½ tsp salt
4 tsp ground cinnamon
250ml milk
2 large eggs
240grams butter (softened)
300 grams / 1 box of mixed berries – blueberries, raspberries, strawberries (frozen)
300grams sugar

1. Preheat oven to 190 degrees Celsius. Paper line 20 muffin cups
2. Sift the flour, baking powder, baking soda, salt, cinnamon together in a large bowl.
3. Add the milk, eggs, butter. Stir quickly and combine. Add the berries and sugar, stirring quickly again just to combine
4. Spoon into cups, fill almost to top. Bake until brown and crusty, about 20 minutes. Test to see if its done by inserting a wooden stick to see if it comes out clean.

Absolutely delicious and it tastes nice close to Christmas when everything begins to smell of cinnamon!

the other day i try to make cinnammon rolls but so sad turns out to be too hard. I guess i overput the flour lah. Donnoh why B can eat 4 and the rest give to the bin! ahahah.. come here bring some muffin for us ok. looks yummy:)

Hey Manis, interesting photo you have there! I´ll try to make cinnamon rolls soon...will use my free days to do just that. :) I tried it once between and it looked really ugly but tasted fine. Yeah lah, if I do go over Dresden can bring some muffins..hah. That´s if they don´t spoil by the time I reach there.

I have shared about you to my first born, and in fact this last week was busy....in the thick of things.....cooking and having people over. Hey thank you for sharing about frozen berries. You see i have a pack still in my freezer and unfortunately, somewhat squeesy and sorrowful looking to use for mince pies, so what a good idea to make muffins out of them.

I just had an entry today with some photos of my princess and have a peek at my apprentice cupcakes i did for my Princess, Michelle, and then for first born, special request of my nasi lemak, asam prawns and sambal petai, plus comfort good old chicken.

Hey Pris, I am suddenly reminded of the rock muffins we baked last Christmas!! Do u still remember? We even da-bao'd some to the "Disneyland castle". haha but found it not edible.
I like choc chips in my muffin too. Do you think I can add some choc chips to this recipe? heehee
Or can you give me the recipe for the choc chip + cinnamon muffins?

Hi Irene, great food photos! You´re a great cook! WOW!!!! WIsh you could be in Germany and cook for me! How did you learn how to cook so well when you´re living in Malaysia (right)?

Dear Bel
I have no idea how come the last time during Christmas it didn´t work out.... **weird** It normally workes out actually. I think its because the muffins were kept in the car and they froze! There´s no other explanation. Hmmm, I don´t have any choc chip muffin recipe though.... If you try one out, can tell me if it works!
