Ginger Chicken with mushrooms and coriander


























This is such a comfort food! I remember that we used to have it on a weekly basis at home. Of course I never thought twice about it then, but its one of those "normal" dishes that really reminds you of home. Last night when I cooked it, it occurred to me that it must have been 6 years since I last ate it!

And of course I was delighted to see the hubby enjoying this dish too. Don´t expect him to relinquish every bite of it as much as I do, but he likes it enough for me to cook this meal anytime!

This dish is easy as pie and is definitely something that I will cook again! Thanks again Beaulotus for sharing your recipe with me!

Ginger Chicken with mushrooms and coriander
- 500 grams chicken fillet
- 1 shallot
- 3 cloves of garlic
- 1 huge piece of ginger, sliced into thin pieces
- 1 can of sliced mushrooms

Marinate:
- 2 tbsp Dark soya sauce
- 2 tbsp Light soya sauce
- 1 tbsp Oyster sauce
- 1 tbsp Sesame Oil
- 1 tbsp Dry Sherry
- Salt and Pepper

1) Dice the chicken fillet and marinate it with the above sauces for a few hours or overnight.
2) Heat up some sesame oil in a non-stick pan
3) Fry the shallot, ginger and garlic till fragrant
4) Add in the marinated diced chicken and stir-fry for a minute or so.
5) Add in the mushrooms
6) Mix some corn starch in water and pour into the pan
7) Stir fry until sauce thickens.
8) Sprinkle some chopped chilli powder for a tinge of spicyness
9) Garnish with coriander and / or spring onions. Serve warm with jasmine rice

I hope this is the correct way to write it...hmmm. Anyway, you know what I mean.

Yeah, I´m still working as an English teacher. But it has always been a part-time thing, we only get 15-20-hrs per week. So that leaves me with time to cook/bake.

Besides, I don´t really like the regular food at restaurants here and not to mention that they do cost a bomb, for something which I feel I can make that better.

You cook a LOT for someone with 3 kids and a household to run! I´ve no idea how you can churn up food like a factory production all the time! I can hardly keep up with the new recipes you post on your blog!

Pris ah, you are very computer-savvy leh. How do you get Chinese characters on your computer, dear?

I cook and eat alot and you can see that in the 12 Kgs I've gained since living in Italy. I also tend to transform my letovers so it looks as if I've been cooking alot - but not really lah.

Hey Serene
Actually your computer should have it. Its under the "language" settings. There should be an icon on the bottom right of your computer that says "EN" for English. Mine is "DE" for Germany.

You should be able to search for new languages by clicking on something like "options". Hope that helps!

Yeah, your ability to transform leftovers to something awesome is amazing!! Something I´m still learning.
