Chicken hor fun from homemade chicken stock

Chicken hor fun version 1- Didn´t have any veg, so used leftover spring onion and had simple chicken hor fun with soup....slurpilicious! Homemade stock is SOOO much better than the instant Knorr Chicken stock.... But it is quite a bit of work to boil the entire chicken for 6hrs, take away all the bones, sieve away all the miscellaneous stuff swimming in the stock and have the entire stove so oily!...But was it worth it? You bet!!

Chicken hor fun version 2 - This time deciding that I wanted the real deal, I went to the Asian store, bought more hor fun and chinese vegetables. Together with mushrooms, it smelt and tasted even better! Just reminded me of the typical hor fun I order from hawker centres...YUM!

I´ve been down with the cold. Went to the doc´s yesterday and had to wait 2 hours (?!?) cos one doctor was on holiday and the other one had to leave for a while for an emergency home visit. Anyways, knowing and half expecting that I wouldn´t get any medicine, I decided that I still wanted to wait, cos I wanted to have my medical certificate. Even though my school allows me to absent myself without an MC for 2 days, I still preferred to cover myself - maybe that´s the Singpaorean side of me coming ou.

I wanted the doctor to take a look at me and gauge how many days of leave I should have, knowing that I´m prone to the flu bug during colder weather. I was pleasantly surprised when the doc gave me MC for the rest of the week?!? (3 days in total) I wasn´t expecting more than 2 actually. Turns out the female doctor there must have been one of those firm believers of "no medicine, but lots of rest". That´s something that I´m thankful for. In Singapore, its more typical for doctors to issue antibiotics, or medicine so that the flu symptoms disappear super fast, but you get only 1 day of MC if there´s no fever and 2 days if there´s a fever. Yay! So something positive about Germany! :)

And yup! What I´ve been doing with my time? Cooking! I simply can´t take heaty fried food and all...so resorted to making my own chicken stock and having my all-time favourites! Chicken hor fun!

Ohh tried out a new recipe from Rasa Malaysia - It consisted of all the ingredients that I have lying around in my fridge but just didn´t know what to do with them, since I bought them in a wimp - thinking that I needed them, but can hardly find stuff to cook with them.....i.e. Tau cheong and Kecap Manis. What on earth do pple cook with them?

Spring onions, red pepper, chinese fungus

That´s ginger, garlic, shallots all stir-fried together... For the full recipe, click here.

Ginger and black fungus chicken. (姜丝云耳鸡)
I modified it by adding in red pepper, since I have an overdose of peppers in my fridge right now. Verdict? Its not bad, though my hubby really liked it. He said its one of those dishes he can enjoy without being "killed" by the spicyness....hahahah!

Dear Pris

Your pix of the har fun made me drool. It has been a while since I took my favourite soya sauce chicken hor fun at West Coast. I think I shall pop by this weekend to taste it. Take good care of yourself and rest well.

Your dad will be having a house warming this Saturday. All your relatives will be there. Good thing is that we will be catering and we will have their signature mee siam dish. You haven't come back to me regarding the things u need. Preferably not too heavy or bulky but I will be sending u the mee siam and prawn mee paste?

Can I have some of your home-cooked food? I'm not feeling too great myself. I'm at work but have my coat wrapped around me because I'm constantly shivering. It's so cold all of a sudden... :( Seems to be only me that feels it though... Reckon I'll stay at home over the weekend and rest.

Lots of love,

jie jie

Dear Grace, thanks 4 yr compliment! I don´t think mine can compare to all the Singaporean cooks, but its enough for someone so far from Sg like myself...and I can always control the amt of fat in my dish, haha. Yeah! I remember. My dad did mention smth abt the housewarming on his email. Yummy! mee siam. Can´t take that now anyways since I´m keeping away from spicy and heaty food. Can I email you on what I would need? Not big stuff, only small stuff. Thanks a million!

Dear jie jie
Oh dear! You´re not feeling too well yourself eh? I would be more than glad to cook the "healthy-and-easy on-the-stomach-and-body" food that I´m cooking these days. I´m getting better from the cold, but its still there, like an irritating bug- literally. My cold bug actually started with me feeling cold all the time actually...can drink lotsa tea with honey to boast your immunity during this cold weather....

Dear Andrea! So nice to hear from you! :) Hahah, you can buy from the downstairs hawker centre? OH but you´ll be moving to China soon right? Then perhaps can try to cook on your own. But I think the food in Shanghai is going to be really nice too! There´s a lot of Singaporeans living there, perhaps there´s even a Singaporean restaurant?

Hi Pris

Yummy! I went to try out the hor fun stalls near my hubby's workplace yesterday and today. Realised, they don't taste authentic and it was not nice. Perhaps I should also try making my own hor fun...hehehe...btw i updated my blog and there are new places in the slider.

There's no authentic Sg food in Shanghai, unless yu cook them yourself. I've colleagues who bring over laksa paste and chicken rice paste in their check-in luggage. Besides, food in Shanghai is always so oily, despite the less oil, less salt, no MSG instructions I always give them. After a while, I just gave up. There's nice Jap food near the IT Mall though. Jap buffet...not exactly authentic but make do la...hehe. Oh btw, let your friend know to bring over ready-to-cook paste fr Prima Deli if she so desires for Sg food in Shanghai.
