Fluffy pancakes


OOhh... I've been wanting to blog about this for the longest time.

Now that Sammy eats whatever I eat, I try to experiment food with him. While thinking about what to make for breakfast one day, I remembered that I haven't had pancakes for the longest time.

And not just any pancakes, but I had a craving for those airy, fluffy types. So I googled "awesome pancakes" and tried the recipe that came up. I read through the comments and modified the recipe to suit my needs.

The pancakes were delish and hubby was also in 7th heaven to be able to begin his workday with pancakes. Recipe is so quick and easy, I'm thinking of making these pancakes if we do brunch on weekends.

Oh and Sammy enjoyed them too of course. Although I think he's becoming a gourmet because he ate the pancakes when they were warm but when I stored them up in a tupperware for consumption later, he refused them flatly with a wave of his hand. **hmmm**
 
 While frying, air bubbles appear in the dough resulting in airy and fluffy pancakes
 The final product with honey since I didn't have maple syrup
 
 Pancakes (makes 8 medium pancakes)
  
- 360ml milk
- 4 tbsp white vinegar
- 250 grams flour
- 4 tbsp white sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 eggs
- 4 tbsp butter (melted)
- Oil

1. Combine milk with vinegar and set aside for 5 minutes "to sour".

2. In a separate mixing bowl, combine flour, sugar, baking powder, baking soda and salt. 

3. After 5 minutes is up, whisk egg and butter into "soured" milk. 

4. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. Leave aside and do NOT stir the mixture anymore. 

3.  Heat some oil in a frying pan. Over very low heat, pour batter onto pan and cook until bubbles appear on the surface. Flip and brown on the other side. 

Pris' notes: 

- The vinegar in milk is a substitute for buttermilk. So if you have buttermilk, just use it instead.

- As mentioned above, do not stir the batter once you're done whisking. You want your pancakes to be fluffy so you would want to avoid bursting the air bubbles trapped in the batter. 

- You don't want your pancake to burn, so use a very low flame / heat while cooking the batter. This allows you to control the cooking process better and will result in a delicious brown / yellow colour of pancakes.
