Homemade prawn-pork-ribs-soup

I´m such a foodie. Can´t help it, really. When you´re born and raised in Singapore, the food paradise, you´re simply trained to eat good food. Of course staying overseas has forced me to cook on my own, such that I don´t die of desperation and settle for Singapore-food-dreams. Sounds corny I know, but I´ve never dreamt so often of hawker centres until my first year in Germany. Its gotten better now, thank God.....

Hence, this post! I´m SOOO happy. I´ve been wanting to make my favourite prawn noodles soup for the l-o-n-g-e-s-t time! Actually I bought Kang Kong many times, cos I thought I would have the time to cook it, but as it turned out, I always didn´t have enough time to attempt this dish.

Hence, yesterday when I finally told myself that I WILL cook it and I did, I was SOOO happy. Like a person who wants to climb Mt Everest and eventually manages to climb it! Ok, so it wasn´t a mountain, but boy! Was it so overwhelming to be able to taste home-cooked prawn-and-pork-ribs soup! And I made my own variation too! BEST! It wasn´t even as difficult as I had feared it would be, but yup, its quite a bit of work...not for the faint-hearted.

I shall let my photos do the talking. And yup! It tasted even better than it looked!

Okok, I know it looks disgusting, but this is how you cook prawn soup. First frying the heads with lots of garlic and setting it aside, to be boiled with the soup

That´s not typically Singapore. Its my modification! I prefer to have grilled prawns, so I saved the rest of the prawns, seasoned it with lotsa olive oil, garlic, salt and pepper and grilled it in the oven....they were king-sized prawns too! Sometimes, you simply need to indulge!!

I cooked with a sieve, so that the soup wouldn´t be "contaminated" with the prawn heads. For my hor fun (flat noodles) too, I cooked it with a sieve to facilitate scooping it out later. The soup was so tasty as I had left it simmering for 2 hours with the ribs and all......

The finished product.....even fried the shallots myself too...ok, I cheated by adding some ready-made fried onion, to increase the crispyness of it all.....It was sooo good, we had a second portion today again for dinner........If you´re my guest at my place, we can cook this together

Looks great! There's a place here in St. Louis that serves fresh boiled crayfish in buckets with the heads still attached! Actually I don't mind, but I can't eat that side, I stick to the tail meat ;-)

Bel - Sure! We can cook together...haha, that´s if you can still eat a big meal after all the Christmas eating! This was an indulgence meal really. We used up like 800grams of tiger prawns at one go. I think in total, I paid probably about 20€ for the ingredients, which is comparable to eating at a small restaurant for two people. But the yummy food makes it all worth it!

Archie - Thanks! Cool that you´re so familiar with seafood. People in Germany are not big on seafood, but more on steak, meat, sausages etc.... A big part of this being that Germany is stuck in the middle of Europe, with little access to the sea, so only North Germany gets the seafood. :( I love crayfish! But I think I´m a bit allergic to it!Yikes. What do you mean by you can´t eat "that side"? Which side? **confused**

Hey June! :) Xie xie ni! Heehee. I´m so happy to be able to replicate a bit of Singaporean-ness on my own. :) I think the prawns are better than those at the hawker centres, they don´t grill them there, do they?

definitely! the hawkers usually blanche the prawns.. grilled prawns and pork ribs noodles... mmm.... :)

Yes Pris

They don't grill the prawns over here. They don't even use such big prawns. Even if they do, it's only like 2 prawns split into 2 to give u 4 halves. Looks soooo yummy. Pity I don't have the time to cook with my new job. Maybe when I move into my new place.

hey june! You can try cooking yourself too hahah! :) But aiyah, its really quite a bit of work and considering the price you can get them at the hawker centre, not really worth it hahah.....but grilled prawns are easy!

Archie- haha, I don´t eat the heads either...only use them in the soup...though sometimes I do lick the heads, my hubby thinks its gross though hahaa...

Cyn- that´s true. At hawker centres, they don´t usually give a lot of prawns.... I would just cook them myself if I were living in Singapore....so much cheaper then.... Its quite a nice variation hor?

Yes...east meets west combi. Prob next time when I get my own place and when I have more time. Work's been getting busier with more pple on leave and I'm covering classes too.

Not just your hubby thinks that you are being weird when you likc the heads - your sis-in-law thinks the same! Bleurgh... Also learned the other day that crayfish lose their skin twice or once a month and then eat it. Has put me off crayfish as well...

Hey jie jie! Don´t worry! I can understand how disgusting it must be for you to see the prawn head thing! But the soup tastes SOOOO good! Its worth the disgusting look of the prawn head hahahah....can´t wait to see you sooN!

Wow! You made it yourself! Once, I kept prawn heads in the freezer thinking I'll cook it one day but when it was time to move, i threw it out! :( Last year, I came back from Malaysia with a instant Prawn Mee paste! :)
