My first ever cheesecake

Yesterday, I decided to bake my first-ever cheesecake from a recipe I got from a magazine. I was just dying of curiousity to try how home-made cheesecake tastes like. And boy, it turned out so so well! I had to get all my ingredients from the german supermarket, so I had to translate my recipe to see what the german words were. I spent quite a bit of time searching the shelves to see what I could possibly get that fits the recipe - even then I wasn´t so sure if I bought the right ingredients.

My cheesecake consists of Philidelphia cream cheese, Ricola (a type of cheese), lemon and orange peels. I made the biscuit layer myself too - like 50% - bought the biscuits as Walker´s shortbread and crushed it and mixed them together with butter. Yumyum!

I kept asking God to help me get the right ingredients and all. And GOD IS SO GOOD! Woo-hoo! Stephan gave my cheesecake a 10/10! Perfect score for the first time! I would give it the same marks too, heehee. I baked it for our movie night during youth cell - we watched "Remember the Titans" with a projector at our place, as part of the holiday season. There´s 2 weeks easter holidays in Germany - can u believe it?

 I wish I could teleport the cheesecake over for you all to try....

Cheesecake recipe

Ingredients:
375grams of Walker´s shortbread biscuits (any butter biscuits with high fat content will do)
25 grams melted butter
375grams Philadelphia cream cheese
375grams Ricotta
200grams sugar
3 eggs
1tsp grated lemon rind
1tsp grated orange rind
1 tsp vanilla essence

Method:
1. Preheat oven at 140 degrees celsius. Grease a springform tin (22cm) and line base with baking paper

2. Process biscuits and butter in a food processor until mixture resembles breadcrumbs. Press evenly over the tin base and chill in the fridge until it hardens

3. Mix cheeses in food processor until smooth. Add remaining ingredients and combine. Final mixture should be creamy and pour easily.

4. Pour oven base and bake for 1 hr and 30 minutes or until set. Leave to cool.

Oh another good news! Stephan and I have confirmed our return flight back to Singapore. We´ll be in Singapore from 10 August 2007 to 10 September 2007. A full 1 month. Can´t wait, still seems like quite some time, but we´re really happy. Got a ticket for 750€ (S$1500) with Singapore Airlines. That´s quite a good price, considering August is peak season and that is with Sg Air.
